The pressure is high to have a great picnic everyone will enjoy. Now that my son Graham has gluten sensitivity I decided to create a meal that focuses around being gluten free without anyone noticing the food is gluten free!
Serve Simple Starters
Chips and Sweet Onion Dip
- 1 Tbsp olive oil
- 2 Vidalia onions chopped fine
- Coarse salt
- Ground pepper
- 1 c reduced-fat sour cream
- 2 oz reduced-fat cream cheese block room temp
- 1½ tsp white wine vinegar
- ¼ c fine chopped chives
- GF potato chips
- Heat oil over medium heat; add onions with salt and pepper; cook golden brown 12-15 minutes; cool to room temp.
- Combine all ingredients; chill until thickened; 1 hour or up to 2 days
- Serve with GF chips
What to Pour
Most people want some kind of refreshing beverage when they attend a picnic. Serve bottled water and a pitcher of fresh squeezed lemonade. My gluten free honey lemonade recipe is perfect for people with allergies!
4 cups water
1/3-1/2 c local honey
1 c fresh squeezed lemon juice
- In medium to large pot bring water to a boil
- Turn heat off and whisk in honey until it dissolves
- Add lemon juice to pot and stir; cool to room temp; refrigerate or serve over ice
